To meet growing demand from the
distilling sector , the site undertook a
57 , 000 - tonne expansion project in
2023 , which included the installation of
an advanced membrane bioreactor and
reverse osmosis system . The result was
clean , reusable water that goes straight
back into steeping .
The system removes solids and organic
material from process water , treats it and
returns it safely to production , all without
compromising malt quality . As a result ,
around 80 % of feedwater is recovered ,
cutting the site ’ s dependence on
freshwater sources and saving more
than 100 million litres every year .
At Bairds Malt in Inverness , Scotland ,
the team faced a challenge that many
growing sites encounter : how does
one boost capacity without increasing
